Hojicha
Hojicha is a relatively recent addition to the arsenal of Japanese green teas. Made by roasting the twigs of the tea plant — which had previously been discarded as waste — the best hojicha teas have a delicious aroma and a savoury flavour profile that makes them an excellent accompaniment to meals.
